Pork Butt Project 2012 Final

Howdy,

Sorry the last one took so long. Since dinner was ready and we had company over, I thought I would wait till later to post this.

These last 3 butts were done around 7ish.

So when I took them off, I wrapped them in foil and dish towels, like the others and into the cooler to rest.

When our warm potato salad was just about finished I pulled the first one to have with dinner

The pork just fell apart when I cut the strings

It didn’t take much effort to pull, a fork and a pair of tongs

To go with the pork I had made some coleslaw and potato salad. Both recipes were from The Looneyspoons Collection cookbook so I am not going to repeat them here. They were both great too! I wont be buying coleslaw again, this was so easy and the potato salad was a warm bacon vinaigrette salad. Totally different than what I am used to, but really good.

Finally for dessert, my buddy Glenn made 3 different pies, pumpkin, peach and apple.
Not sure why he thought we needed 3 pies for 4 people…. but whatever :-)

And Jackie made some home made French Vanilla Bean Ice Cream to go with them.

In the end, this was a LOOOOOONG day!!!! But it was worth it. I got 5 pork butts worth of pulled pork out of it. I will vacuum seal it tomorrow and freeze it. So my December pot lucks are all taken care of.

I also proved to myself that yes I CAN do 40 pounds of pork butt in one shot! Woohoo!!! Gotta love the XL Big Green Egg!
