We had some pals over for brunch today, and I thought I’d try something I haven’t done before… Cinnamon buns on the Big Green Egg. I just took my standard dough recipe (adding a tablespoon of sugar) kneaded it in my Kitchen Aid, let it rise for two hours, rolled it out into a big rectangular sheet, covered it in a butter, brown sugar, and cinnamon mixture, rolled it up into a log, then sliced it into discs just over an inch thick.
I placed them in a buttered cast iron pan, left them to rise just a little longer, then popped them in the BGE for about 20 minutes between 375F and 400F over the plate setter with the feet up and the grill on top. I half expected it to fail, as most sweet roll dough recipes I’ve seen call for milk and eggs, and I just used flour, salt, sugar, yeast, and water, but they were actually really good! Just getting a bit crisp on the outside, but still soft and doughey on the inside.
