Alder Planked Orange Ginger Trout

After eating fish practically every single day in Hawaii, you would think we would be sick of it, but actually it sparked us on a bit of a fish bender! We went hunting through the freezer and found some trout, so we thawed it out and made an Orange Ginger marinade for it.

The marinade recipe is from the book “The Looneyspoons Collection” and is supposed to be done with salmon, but it works great with trout as well.

I didn’t follow the recipe exact, this is what I did:

    • 1 tbsp Soy Sauce
    • 1/4 cup Hoisen Sauce
    • 1/3 cup frozen orange juice concentrate
    • a bunch of grated ginger (I like ginger so I used lots)

I then mixed it all together and spread it on the fish and marinated in the fridge for 30 minutes, while the Big Green Egg warmed up.

Next it went on an Alder wood plank that was soaking in water for a couple hours…

I let it cook for about 20 minutes at around 400F. The alder wood gives it a slightly less powerful flavor than cedar, but it’s fantastic!

Earlier I had also made a curry quinoa salad, also from the Looneyspoons Collection cookbook. I don`t want to get in trouble for posting their recipes so I’ll tell you it’s the one on page 38 🙂 Buy their cookbook, it’s AWESOME!!! Anyway here’s the salad:
