Boneless Leg of Lamb

This was a boneless leg of lamb that I picked up at Costco.

You will need:

  • leg of lamb
  • EVOO
  • S&P
  • dried oregano (fresh would have been better)
  • grainy Dijon mustard
  • fresh rosemary
  • 4 cloves of garlic
  • 1 shallot
  • 2-3 Lemons (even though I show 1.5 lemons, it didn’t seem lemony enough)

All mixed up and ready to get happy in the fridge for a few hours:

Going on the Big Green Egg at about 375F direct over the coals. I’m not 100% sure how long it took to cook, I ended up putting a meat probe in it and waited till it said 135F in one side and 125 in the other, thicker side. I wanted different temps for different people’s tastes.

I put the meat down on the rosemary… not sure if it really added much, but it smelled good 🙂

I also made a Grilled Caesar Salad and a Greek Orzo Salad to go with dinner, here is the last plated picture:
