Vegetarian Tortilla Casserole

Tonight Jackie had baseball so she swung by the store on the way home from work and left a plan for me to make dinner when I got home from work. Vegetarian Tortilla Casserole and some home made guacamole.

I started out by making the guac, but I’ve shown you all those pictures before, so we can fast forward to the rest of it.

Now we first had a rendition of this at our friends place, but I have adapted the recipe to be a little more “Texican” 🙂

And tonight I also tried my hand at adapting it for the Big Green Egg!

Here’s the ingredients list:

  • 1 can white kidney beans
  • 1 can black beans
  • 1 can tomato sauce
  • 1 small onion diced
  • 1 red pepper diced
  • 1 jalapeno minced
  • a small bunch of chopped cilantro
  • juice of 1 lime
  • 1 tbsp each of chili powder, cumin & smoked paprika
  • about a cup of frozen corn
  • a mix of cheddar and mozza cheese
  • 2 cloves of garlic
  • 5 tortilla shells
  • salt & pepper to taste

So the next thing I did was get the Big Green Egg lit and sitting around 375F. I preheated a cast iron skillet directly over the coals. I also drained and mashed the beans up roughly.

The first thing that went on was corn…

Then the onions and some salt and pepper

I cooked these till the onions softened then added the peppers and garlic

I sauteed these briefly and then added the juice of one lime

I then added the beans and then the tomato sauce and then the spices and mixed them all together and let them cook for a couple minutes, but stirring often

I then added the fresh cilantro and stirred it in

I then took the mixture off the heat and brought it inside to make up the casserole. I started with a layer of the bean mixture, then a tortilla and then cheese… then repeat

Then I put it on the Big Green Egg at about 375F indirectly with the plate setter

It took about 18 minutes and then I shut it down for about 5 minutes while I waited for Jackie to get home from baseball

It may not be the prettiest thing in the world, but serve it up with some guacamole, sour cream and Tabasco sauce and it’s a pretty yummy (and healthy if you cut back a bit on the cheese)

It actually turned out quite tasty on the Big Green Egg. The lump gave it some good flavour that you just don’t get by doing it in the oven.
