One of the appetizers we served at Fargo EggFest 2012 is prosciutto-wrapped dates. We can’t take credit for coming up with this idea, that all goes to our pal Daena. These are simple but delicious treats.
You will need:
- prosciutto, thinly shaved, and cut into strips
- Asiago cheese, thinly sliced
- Pecan halves
All you have to do is take a date, a pecan, and a piece of cheese, and wrap them in a strip of prosciutto, and pop them on the BGE grill over direct heat at around 350F until the prosciutto starts to crisp up a bit (ours took around 10 minutes and we put it on the raised grid to create a cooking surface higher in the dome and away from the coals).
That’s it!! I told you it was simple. But you won’t believe how yummy simple can be. The saltiness of the prosciutto and asiago is balanced nicely by the sweetness of the dates. The nuttiness of the pecans adds some great flavour and texture. These are great hors d’oevres to serve and your guests will gobble them up, so make lots!
