This Jerk Chicken recipe is better if you plan your meals ahead of time as the extra time the chicken sits in the marinade makes it so much better. But in a nutshell it has the following ingredients:
This is some bone in, skin off chicken thighs that I put on the raised grid at about 350-375F on the Big Green Egg.
Don’t let the green marinade be off putting. It is from the jalapeno peppers and and green onions and cooks away.
We also tossed together some pineapple and red pepper skewers to go along with this. I cooked the chicken thighs a little lower and slower and even without the skin they were super moist and juicy. It took about 30 minutes for them to get in the 175F range.
We finished off the plate by cooking some coconut black bean & basmati rice.
