Asparagus & Cheese Pizza Upsidedown

I take no credit for this pizza, it was our friend Sue’s creation, I just helped her cook it, but it was delish and I though I should share the instructions.

You will need:

  • Pizza Dough (your own recipe or ours)
  • Olive Oil & Garlic (for the “sauce”… zest the garlic into the olive oil)
  • Asparagus
  • Your favorite cheese
  • Green Onions (minced)
  • Fresh Cracked Pepper to taste

Start off by cooking up some sliced asparagus. For this pizza I sauteed them in some butter, but alternatively you could grill them first.

Then roll out the pizza dough and brush with the olive oil and garlic “sauce”. Simply zest a garlic clove into some olive oil and mix it all together and let it stand for a couple hours. Instant Garlic Oil!

Then, in a reverse move… spread your favorite cheese down on the crust (gouda, muenster, even brie would awesome) and then top with the asparagus… the upside down pizza!

Cook on your Big Green Egg pizza stone as you see fit. We do 600F for 4 to 5 minutes. When it is done, let it rest for a couple minutes on a wire rack and top green onions (shallots would be good too) and fresh cracked pepper.
