Apple Oatmeal Mini Muffins

For breakfast at Fargo EggFest we wanted to show how the Big Green Egg could be used for baked goods, so we made Apple Oatmeal Mini Muffins (well our friend Daena made them… but we’ll share in her glory). 

Here is what you’ll need:

  • 1 1/2 cups quick cooking oats
  • 1 1/2 cups boiling water
  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 3/4 cup brown sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/4 cup honey
  • 1/4 cup applesauce
  • 1 egg
  • 3 tbsp melted butter
  • 1 tsp vanilla
  • 1 1/2 cups chopped apples
  • Cinnamon sugar to sprinkle on top

It’s your standard muffin mixing method: combine the dry ingredients in a bowl, combine the sugar and wet ingredients in a different bowl, then mix the wet and dry together, just until it forms a batter (don’t overmix).  Scoop into mini muffin tins and top with cinnamon sugar and bake on the Big Green Egg at 350F (indirect) for 13 to 14 minutes.

Makes about 4 dozen mini-muffins.  YUM!

Optionally you can top them with any kind of icing you wish. We used a butter cream icing at EggFest.
