Our second breakfast dish from Fargo EggFest was Lemon Banana Berry Bread, but instead of baking it in a loaf pan, we used a cast iron skillet, similar to how we would make corn bread. (Again… I say “we” but I mean Daena – she’s the skilled baker on the team).
Ingredients:
- 1 cup whole wheat flour
- 3/4 cups all purpose flour
- 1 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/2 cups quick cooking oats
- 3 tbsp butter
- 1/3 cup brown sugar
- 1 large egg
- 2 mashed bananas
- 1 tbsp lemon juice
- 1 tbsp lemon zest
- 1 cup blueberries
Combine dry ingredients in one bowl, combine sugar and wet ingredients in a separate bowl, then mix together. Pour the batter in a greased cast iron skillet and bake on the Big Green Egg at 350F (indirect) for 30 minutes.

Unfortunately it was devoured so fast we never got a chance to take a picture of it hot off the Egg at EggFest but here are some practice run pictures we got at home.
