Jerk Chicken and Pineapple Skewers

This Jerk Chicken recipe is better if you plan your meals ahead of time as the extra time the chicken sits in the marinade makes it so much better. Jackie whipped up the marinade for the Jerk chicken recipe found in the Looneyspoons Collection cookbook that you can find here: The Looneyspoons Collection

Being that it is a copyrighted recipe, we are not going to publish it on our blog but I suggest you check out their cookbook! It has a ton of great recipes that can be done on a Big Green Egg!

But in a nutshell it has the following ingredients:

Jalapeno Peppers
Green Onions
Lime Juice
Soy Sauce

This is some bone in, skin off chicken thighs that I put on the raised grid at about 350-375F on the Big Green Egg.



Don’t let the green marinade be off putting. It is from the jalapeno peppers and and green onions and cooks away.

We also tossed together some pineapple and red pepper skewers to go along with this. I cooked the chicken thighs a little lower and slower and even without the skin they were super moist and juicy. It took about 30 minutes for them to get in the 175F range.


We finished off the plate by cooking some coconut black bean & basmati rice.
